Christmas Cookies 2024

I love baking cookies. It's my favourite part of Christmas. But this year, with a nearly two year old and a heavy load at work, I thought... let's take it easy this year. Just one recipe, maybe two if I really feel the urge.
Reader, I did not stop at two. I wanted speculaas, then I started craving chocolate, then I felt like we needed something fruity to round it out. Then I had leftover chocolate dough, and chocolate-vanilla swirl cookies are so pretty...
Ahem. So this is what it looks like when I 'restrain myself'.
The results of this year's batch are:

- Honey Macadamia Shortbread
- Speculaas and Cherry Jam Cookies
- Chocolate Caramel Sandwich Cookies
- Chocolate Vanilla Marble Cookies
- Sugar Cookie Trees with Pistachio and Raspberries
Even after 2yo climbed his baby tower and stole several trees off the cooling rack, we were able to box some up to give as gifts and have plenty left over for ourselves.
