Roasted Vege Pasta
A fairly straight forward vege pasta dish. Roasted the veges (capsciums, cherry tomatoes, asparagus, mushroom, shallots) with some garlic, olive oil, salt and pepper. Toasted some pine nuts in a pan. Served on top of rosmarino pasta with butter beans for protein and then crumbled feta, some basil and parsley. A squirt of lemon juice to finish it off.
